Have you ever had pig brain that was good? How was it done? I tried making it in scrambled eggs and I strongly disliked it but in general I like offals so maybe there's a better way.

>>22064695 Yeah it's pretty much entirelty fat with a offaly flavor. But the thing I disliked the most is that it sticks to the inside of your mouth and lingers for a long time. I'm a lover of offals but they are good when combined with stuff that's fitting but brain is a new territory because all the other offals are lean and not sticky so they can be easily paired with carmelized onions and fruit, honey, creamy sauce, vegetables and there is a balanced relationship between the offal and the rest of the meal. But brain because of it's stickiness dominates and because of it's fattiness can't be served with anything fatty. I feel like maybe putting it in an aciding spicy soup might be good because the acid might wash out your mouth of fat which will make it more "friendly" to other ingredients? Just thinking out loud.

I had it with spicy hot pot in China. It's basically like tofu. And another time at a barbecue place served basically sitting in oil with a lot of chilli and other spices, I guess cumin. Really nice and a good texture. Not offensive at all except if you're thinking "ew it's a BRAIN."

>>22064743 >sides It was itself a side. It was at a crayfish restaurant and they had sides like cold noodles, deep fried dough stick things, pidan tofu, and one of them which was freshly prepared by the entrance was these small foil trays each with one brain sitting on a barbecue. Really nice
