All 3 Interdictor-class heavy cruisers that showed up in rebels got destroyed, and that's because they had the most obvious weakeness of all, their bulbous gravity well projectors. The first got sabotaged from the inside and pulled his own cruiser escorts into intself, the second tried to keep Commander Sato's ship from fleeing using it's garvity beam, but it was a trick, and Sato's ship turned towards it and rammed super fast due to the effects of the gravity projection. And the last one was simple blown by mandalorians attacking it from the outside with blasters and jetpack rockets, they just shot the projector from the outside until a video game glowing crack weak spot showed up, and then fired rockets into it, that simple. No wonder the Empire gave up on these ships.
