The guy who did the tile baseboard at my mom's house fucked up and now I can't close these sliding doors all the way. Should I cut the door corner to match the trim or try to create a slot for the doors in the baseboard?

I wouldn't cut the door since it will look silly when the door is open.
I would either cut the baseboard or add a strip of material above the baseboard to close the gap.

Like the previous anon said, I would screw a wooden board to the wall from the footer up.
The same color as the door
