the japanese and asians in general are slimmer because the optimal human diet is one that's high in carbohydrates and low in fats a high carb diet, especially one high in simple carbs, has a stimulating effect on the metabolic rate and the endocrine system the japanese traditionally eat a fuckton of white rice with every meal which gives them as a society a higher baseline metabolic rate
certain regions of japan are even better; the traditional okinawan diet was something like 85% of calories from sweet potatoes, just pure carbs with only around 5% of calories from fat and they are (were, since very few people eat the traditional diet anymore) one of the populations notorious for being long lived and healthy

I never thought preservatives turn into calories or anything like that, but it's also understood that the degree of processing many foods contain can have alternative effects to the physiology and nature of the human body such as harming the processes of certain organs or affecting the brain. I know little about that and am curious if it were known to be a direct influence on either metabolic processes or food cravings.

For a diet to be legitimately low fat, for it to result in meaningful health benefits, you need to be getting no more than 10% of your total calories from fat. The "low fat" diets pushed by the media, on the other hand, tend to have close to triple that amount. A diet with 30% of its calories from fat is only "low" when compared to the SAD that hovers closer to 40-45%.
You also need to consider what types of carbs these people are promoting. By far the best carbs are sugars, specifically fruit sugars, aka the evil fructose (the only thing worse is HIGH fructose!) the media is constantly crying about. Their recommendations instead? Unprocessed modern wheat strains ("whole grains") that absolutely shred your intestinal lining, combined with 30% of your calories from what these people say are "healthy" fats, aka vegetable oils.
A high fat high carb diet is 100% the best way to get fat and diabetic and a diet based around modern grains with 30% of the calories coming from vegetable fats is only high in fat period but is high in the specific kind of fat that is most damaging to literally every part of your body.
