Its very clear that modern single player AAA games are only targeted at millennials and gen x as they are the only 2 demographics who actually buy AAA single player games in large enough numbers to care about. Most Zoomers just play online games and gen alpha just play roblox and nothing else. The only people buying stuff like Zelda and Resident Evil and Final Fantasy and Assassins Creed and Sony movie games and so on are all in their 30s and 40s and 50s. People in their 20s are playing online games and teenagers and younger are playing roblox. So in that regard the traditional old school single player games will probably be gone in the next decade or so.

Developers can target this demo and get decent results but what exactly is "popular" is mostly dictated by what parents/adults decides to give to their kids and what the critical mass of kids finds fun since even young kids are all ruled by social norms, this is to say that kids have almost 0 say in what they get even if they don't want it.
For older kids that are 10-18 it's almost all dictated by social norms and what people older than them think is "cool", otherwise they mostly tend to gravitate towards the same things as younger kids but in different and more "mature" packaging but with "Repetitive" replaced with "Varied" from the above.
Once people turn old enough to have a functional brain (mostly between the ages of 24-30) that is when their tastes in these kinds of media tends to both change and solidify, people are looking for things that can both challenge them and let them zone out from time to time and what they like is less dictated by social norms.
TLDR: You make game for kids by just making simpler and ADHD designed games that markets themselves towards the parents and older kids which essentially mean that you don't actually make games for kids as a demographic more than you market said games for that demographic. The only real way to make games for kids is by tuning the difficulty to be lower so that they have an easier time on-boarding into the medium as a whole where you then start selling games to them directly when they are old enough to make their own decisions.
